#wakame #wakamesalad #nutrition Easy Wakame Salad Recipe 🌱
Like the seaweed salad you get at sushi restaurants, I tweaked it to make it more nutritious. Recipe below:
INGREDIENTS:
Salad:
2 cups wakame, dried
4 cups hot water
1 cup julienned carrot
1 cup julienned cucumber
1 cup shelled edamame, thawed
Dressing:
1⁄4 cup rice wine vinegar
2 Tbsps granulated sugar
2 tsps sesame oil
2 Tbsps low sodium soy sauce
2 Tbsps white sesame seeds
INSTRUCTIONS:
1. Wakame Salad: In a large bowl, soak dried wakame in 4 cups hot water for 10
mins until rehydrated. Once fully rehydrated, drain, rinse and pat wakame dry with a paper
towel or clean dish cloth. Chop into small pieces. In a medium bowl, add wakame, carrots, cucumber and edamame, and set aside.
2. Wakame Dressing: In a small bowl, whisk together vinegar, sugar, sesame oil, soy sauce, sesame seeds.
3. Pour dressing over wakame salad and toss together. Cover and refrigerate for 1 hour before serving.
