Also, speaking of Utahism, Switzerland has a similar case. Despite having a mix of Roman Catholics and Reformed Protestants regarding Religion, and a mix of French, Italians, Romansh and Germans regarding ethnicity, most of the cantons are homogenous in both religion and ethnicity (but mostly ethnicity), with only for cantons having more than one official language.

The weakness of it is the inherent mixed nature of almost every city and town. Most municipalities shift over time which might require the redrawing of state lines on a regular basis.
Also, small towns physically close to each other but on opposite sides of state lines (even ones drawn with Utahist ideas) might still be closer to each other in those metrics than to the capitals of, or other larger cities in, their respective states.
Depending on how you prioritize you could end up with a polka dotted country. Small, densely populated states centered on large municipalities completely surrounded by just a few large, sparsely populated, rural states.

What happens when the cultures and economies of some of these new states shift? Culture can certainly drift and move around over time, and states have historically experienced drastic shifts in their economies (mining towns become liberal tech hubs, steel cities become healthcare hubs, etc). It seems like we'd end up having to redraw these borders on a regular basis to accommodate recent shifts. That'd be a logistical and political mess

The purpose of the United States having states and the freedom to move from state to state easily and efficiently is the representation.
What is the purpose of reorganizing the entire country when you yourself can simply move to the region of your choice to represent your interests.
The only thing i agree with In Utahism is the argument for states being reformed to better allocate resources so they are not depleted but all that would do is take wealth from one people and reallocate it to another as an example the Ogallala Aquifer goes across 8 states and by centralizing it you would simply be stripping power of people who rely on the region for resources to give it to the people use it regularly.
Do I think some borders need to be reorganized yes but every single one no absolutely not.
Honestly just install an electoral college in every state for its representatives and boom you now have representation of all groups in each state.
