Vegan Mapo with Vermicelli Noodles🌶️ Mapo Sauce Recipe below
1 Tbsp each minced garlic and ginger
1 Tbsp each schezwan peppercorn powder, soy sauce, dark soy sauce, sugar, vinegar, bean paste
2 Tbsp each sesame oil, doubanjiang
Corn starch slurry(1 Tbsp cornstarch and 1/4 c water)
1 cup vegetable stock or broth
1/4 c diced green onions
1/2 tsp each red pepper flakes
1/2 tsp chili oil
Sauté in oil garlic, ginger and green onions for a couple minutes. Add all seasoning and cook 2-3 minutes on medium heat. Add cornstarch slurry and cook another couple minutes.
This sauce can be cooked while cooking the ground meat or ahead of time and used in portions
