Ingredients:
Crust:
150g all-purpose flour
Pinch of salt
15g granulated sugar
120g unsalted butter (cold and diced)

Filling:
600g apples
55g brown sugar
35g granulated sugar
1 1/2 tbsp all purpose flour
1 tsp cinnamon
15g unsalted butter (melted)

Finishing:
1 egg (egg wash)
1 tsp vanilla sugar

Instructions:
Crust:
Whisk together the flour, salt, and sugar

Add the diced cold butter and work the butter into the flour mixture until the dough comes together

Wrap the dough and refrigerate for 1 hour

Filling:
In a large bowl, combine the sliced apples, brown sugar, granulated sugar, flour, cinnamon and melted butter - toss gently to coat the apples evenly

Assemble:
Preheat your oven to 200°C

On a lightly floured surface, roll out the chilled dough into a 30 cm circle

Transfer the dough to a baking sheet lined with parchment paper

Arrange the apple filling in the center of the dough, leaving a 2 cm border around the edges

Fold the edges of the dough to slightly overlap the apples

Brush the edges of the dough with the beaten egg and sprinkle with vanilla sugar

Bake for 30 minutes at 200°C

Let the galette cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely
