Here's how to make it:

Ingredients for the Dough
•2 ½ cups all-purpose flour
•1 cup unsalted butter (cold, cubed)
•1 teaspoon salt
•1 teaspoon sugar
•½ cup cold water (plus one ice cube)
•2 teaspoons vinegar (or apple cider vinegar)

Dough Instructions

1️⃣ Prepare Water/Vinegar Mixture: Mix ½ cup cold water with 2 tsp vinegar and an ice cube.
2️⃣ Mix Flour & Butter: Combine flour, salt, and sugar in a bowl. Add butter and cut it into coarse crumbs.
3️⃣ Add Water: Slowly pour water mixture into the bowl, tossing until dough is moist.
4️⃣ Shape & Chill: Form into two discs, wrap in plastic, and chill for 1 hour.

Ingredients for the Pie Filling

•7 large Granny Smith apples (peeled, cored, sliced ½ inch)
•½ cup granulated sugar
•½ cup light brown sugar
•2 tbsp all-purpose flour
•1 tsp ground cinnamon
•⅛ tsp ground nutmeg
•1 tbsp lemon juice (plus zest of ½ lemon)
•1 large egg (for egg wash)
•2 tbsp sanding sugar (optional)

Pie Instructions

1️⃣ Preheat the oven to 400°F (204°C).
2️⃣ Combine apples, sugars, flour, cinnamon, nutmeg, lemon juice, and zest in a bowl. Toss to coat.
3️⃣ Roll out one dough disc into a 12" circle. Place it in the bottom of a pie dish.
4️⃣ Add apple filling, discarding excess juices. Roll out the second dough disc and place it on top.
5️⃣ Trim and seal the edges. Cut 4 steam vents. Brush with egg wash and sprinkle with sugar.
6️⃣ Place the pie on a baking sheet and bake at 400°F for 25 minutes.
7️⃣ Reduce heat to 375°F and bake another 30-35 minutes until golden brown.
8️⃣ Cool for 3 hours before serving.
