This is my upadtes recipe using scalding technique.
What is scalding? Scalding is a method where we bring liquid to a really hot temprature. Here we are bringing fresh cream to a really hot temprature so that the callets melt really well!
•In a saucepan heat fresh cream until really hot.You will have to keep stirring otherwise your cream will burn.
Heat ypur cream on the lowest temprature!
•Add vanilla extract , butter and coffee powder and mix well.
•Take it off heat and add dark callets! Here I have used 54.5% dark Callebaut callets(my fav)
or you can use any dark chocolate preferably couverture chocolate.
•Cover it with anything and let it sit for 5 mins.
•After 5 mins mix it until well combined!
•Store this at room temprature for best and pipeable results!
•You can use this ganache for decorating your cakes and cupcakes!
