2-3 cups left over cold spaghetti
2-6 eggs (depending how eggy you want it, I used 2)
1/2 cup grated parmesan
1/2 tsp black pepper
2 tbsps unsalted butter
In a medium bowl, mix together spaghetti, cheese, eggs and pepper. In a medium frying pan (you can use a smaller one for a thicker frittata) melt butter over medium heat. Add pasta picture to the pan and even it out. Let it cook untouched until golden brown, 5-8 minutes. Carefully flip onto a large plate then slide uncooked side back into pan. Fry until golden brown. Slide onto serving plate, top with more cheese and basil (optional). Enjoy!
