Vegan Spicy Sausage Pasta 🤤🌶️🍝

This dish is the perfect dinner if you fancy something flavoursome and hearty. It’s rich and creamy and the perfect vegan comfort food ❤️ inspired by @kauscooks spicy sausage pasta reel 😍😍 saw it and immediately had to veganise 😍

250g(ish) pasta of choice
4-6 good vegan sausages, skins removed
1-2 tbsp oil
1 onion or 2 shallots, chopped finely
3-4 cloves garlic, crushed
1-2 chillis, chopped finely
1 tsp paprika
1-2 tsp chilli flakes/dried crushed chillis
1 tsp dried oregano
Salt + pepper, to taste
1 tsp balsamic vinegar
1/3 cup sundried tomatoes (jarred in oil), chopped up
1 tbsp oil from the jar of sun dried tomatoes
1/2 cup passata or tinned tomatoes
2 tbsp tomato purée/paste
200ml vegan double cream (you can replace this with creamy coconut yoghurt if you wish)
Large handful fresh parsley, chopped
Large handful fresh basil, chopped

Method:

Put your pasta on to boil in salted water.

Heat the oil in a large pan over a medium-high heat, then add the onion/shallots and garlic and stir. After a couple of minutes add the chilli.

Throw in the de-skinned sausages and using the back of a spatula chop/mash down so they’re broken up whilst frying/browning them.

Once they’re browned, add in the sundried tomatoes and a tablespoon of the oil from the jar, the herbs and spices, the passata, tomato puree, vegan cream or coconut yoghurt. Stir and bring the heat down to a simmer. Let it cook for 7-10 minutes before stirring in fresh parsley and basil, a pinch of salt (to taste) and finally the pasta. Serve and enjoy!
