Chicken Legs - 12ea
Heath Riles BBQ - Chicken Rub
Heath Riles BBQ - Honey Rub
Heath Riles BBQ - Sweet BBQ Sauce
Trimming Butterfly Method
1 - Remove the excess fat from the Chicken Legs
2 - Separate into similar sizes
3 - Take your knife and cut along each side of the bone to separate the meat from the bone
4 - Fold out the meat to represent a “Butterfly”
Competition Method
1 - Remove the excess fat from the Chicken Legs
2 - Separate into similar sizes
3 - using you hands pull the meat back from the end of the Chicken Leg to expose the Knuckle
4 - Using a pair of kitchen sears, cut off the knuckle from the bone.
5 - Pull the meat back over the bone
Traditional Method
1 - Remove the excess fat from the Chicken Legs
2 - Separate into similar sizes
Seasoning
1 - Place them on a Grill Safe rack with the Good side down and season the back side with Heath Riles BBQ Chicken Rub and Heath Riles BBQ Honey Rub.
2 - Flip over and season the top with Heath Riles BBQ Chicken Rub and Heath Riles BBQ Honey Rub
Grilling
1 - Preheat the Weber Grill to 350°
2 - Place the rack on the weber grill
3 - About 15-minutes into the cook flip the chicken and rotate.
4 - Repeat the process every 15-minutes until you reach an internal temperature of 185°
5 - Remove from the grill and apply the Heath Riles BBQ sauce
6 - return to the grill and set the sauce.
