I couldnāt agree more! A good life for me is about experiencing as much of the world as possible. I grew up in a small town and happen to move to a popular destination for international tourists when I was 22. It was life changing! Now, many years later, when I visit my hometown I see how narrow minded the community is in general. Even with the internet, if people donāt travel, they tend to think poorly of diverse cultures.

If I get the chance to visit one of my dream countries, why not go and enjoy the ambience of the place. However, after that, I know I've already found the place I call home, where my happy family and peaceful community are. Kimchi Borscht
Soup:
1 small onion (diced)
1 medium carrot (roughly chopped)
150g Kimchi
300g red beets (in matchsticks or grated)
400g potatoes (roughly chopped)
3 garlic cloves (whole)
stock cube/stock powder
1 tbsp doenjang
1l water
Spinach topping:
200g fresh spinach
1 tsp doenjangĀ
1 tsp sesame oil
1 tsp rice vinegar
1 tsp vegetable oil
1 tsp dark soy sauceĀ
1 tsp sesame seeds
1 tsp chilli flakes
Directions:
1. SautƩ the onion and carrot in oil with some salt until onion is translucent. Add kimchi and fry for another 4 minutes.
2. Add beets, potatoes, water, garlic, doenjang and stock. Simmer 20 minutes until vegetables are tender. Take out the garlic once the soup is cooked.
3. Mix all the ingredients for the salad and serve it on top of the soup.
