For masala
Curry leaves - 6 or 7 leaves
Fennel seeds - 1 tsp
Cumin seeds - 1/2 tsp
Ginger garlic paste - 1 tsp
Coriander seeds - 1 & 1/2. (You can omit the seeds and use powder if you prefer that)
To fry
Coconut oil (adjust) - 2 TBSP
Raw banana/vazhakkai - 2
Turmeric powder - 1/2 tsp
Salt - to taste
Chilli powder (adjust) - 1 TBSP
Pepper powder (adjust) - 1/2 tsp
Method
1. Grind the masala ingredients to a semi-coarse powder. Set aside. **adjust the powder consistency to your liking
2. Add oil to a pan. Keep on low flame.
3. Once oil is hot, add the vazhakkai. Cook for 5 mins or until golden brown.
4. Remove from pan and set aside.
5. To the same pan, add the masala paste. Mix well.
6. After a minute, add the powder ingredients. Mix well.
7. Add the vazhakkai pieces. Coat well in masala.
9. Cook for 3 to 4 mins, until aromatic.
10. Vazhakkai Varuval is ready!
