Ingredients:
2-3 pounds beef short ribs
1 large onion, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Instructions:
In a large Dutch oven or heavy-bottomed pot, bring 4 cups of water to a boil.
Add short ribs to the boiling water and cook for 20 minutes.
Remove ribs from the water and pat dry with paper towels.
In the same pot, sauté onion and garlic in olive oil until softened.
Season ribs with salt, pepper, thyme, and oregano.
Return ribs to the pot, cover, and cook over low heat for 2 hours, or until meat is tender.
Uncover and cook until liquid has reduced and ribs are caramelized.
Serve hot with your favorite sides.
Note: For a richer flavor, consider adding a splash of red wine or beef broth to the cooking liquid.
