If you're unaccustomed to eating foraged foods, you may be sensitive to the oxalates. Eating small amounts at first can help. Some cooking methods help. It depends on the foods, but there's plenty of info available on it. Just a warning, if you're prone to gout, foraging can exacerbate the problem. Happy hunting!😊

They are also known as Jerusalem Artichokes. Some folks call them FARTichokes. They are the tuberous stem crowns of a species of tall, perennial sunflower related to Blackeyed Susans. They are a good potato substitute for diabetics, as their starches don't raise blood glucose levels. Unfortunately, they are a lot of work to prep as their wrinkles and ridges catch a lot of dirt and grit.

Before you fry them, soak them in salt water then put them out on paper towels or towel dry them let them sit for a few so they’re good and dry then fry them pull them set for a few and then fry them again so you wanna do a double fry they’ll make them good and crispy

One of the beauties of sunchokes is that they have inulin, which is an insulin-like plant hormone. They are great for diabetics and anyone who reacts poorly to carbs or sugars.
