Recipe:

Ingredients:
260g all-purpose flour
10g baking powder
1 pinch of salt
40g brown sugar
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground nutmeg
½ tsp ground cloves
100g whole milk (room temp.)
2 eggs
350g honey

Instructions:
Preheat oven at 170°C

Mix together all the dry ingredients then add the milk, eggs and honey

Pour the batter into buttered loaf pans

Bake at 170°C for 25 minutes
(If using a loaf pan, bake for 50 minutes)

When the pain d’épices is done, remove it from the oven and allow it to cook in the loaf pans for about 10 minutes

Remove from loaf pans onto a baking rack to cool completely
