前職は烏丸丸太町にあるミシュラン☆付イタリアン、VENAさんで働いていたシェフが清水五条で昨秋独立しました。予約する際、全く知らずに訪れたら、既に名前でバレていました！イタリアンで6年働いた経験がありますが、やはり自分に合っていると感じるのは居酒屋の方。アラカルト、和伊フュージョン割烹形態で営業開始し、既に予約が難しいほどの人気です。私にとっては、水曜日と日曜日も営業で、15:00から22:00までの通し営業がありがたいです。夕方から入店可能で、一品一品丁寧に作られた料理は、下戸の私でもお酒なしで楽しめる味わい。これからよく通いそうです。前職の影響を受けているようで、ワインの品揃えも充実しています。

My previous job was at a Michelin-starred Italian restaurant, VENA, located in Karasuma Marutamachi. The chef from there recently opened his own place in Shimizu Gojo. I made a reservation without knowing any of this, but when I arrived, my identity was already known by my name.

I worked in Italian cuisine for 6 years, but it seems I'm more suited to izakaya-style dining. The new place, "沐 (moku)," operates with an à la carte menu, offering a fusion of Japanese and Italian cuisine. It's already quite difficult to make a reservation due to its popularity.

For me, it's convenient that they are open even on Wednesdays and Sundays, from 3:00 pm to around 10:00 pm. I appreciate that I can enter in the evening. The dishes are carefully crafted, and since the chef is a light drinker, I can enjoy the flavors without needing alcohol. I feel like I'll be visiting frequently.

Seems like the influence from my previous job is evident here, as they also have an impressive selection of wines.
