I tear the bag open. Book is typically in the best light which may vary depending on where I put the lego set together. For multiples it depends on how many are needed to be done and how many pieces each multiple part has. I keep the box's and books but the bags go in the trash. I keep all my extra unused pieces in a zip lock gallon bag and add to it from each set I complete of whatever extras there may be.

I ALWAYS put spares away to use at a later time for MOCs or mods. I rip open packs, never open them like a chrip packet. 😅 I generally put minifigure accessories in the right hand of a minifigure. I go step-by-step while building, unless like with an AT-AT you need 4 identical legs built, then I do all four at once. And i normally have my instructions on my lap, and pieces on a tray on a table infront of me
