I like both equally for different reasons as well. I like how crude the style looks from the older seasons but I can't deny how much more visually appealing and cinematic everything feels now.
If I had to choose one I think I would prefer the way the show looks now, since it reminds me of elaborate paper sets and I think it naturally lends itself better to the show for the stories they want to tell now.

I love going back to the original seasons for the nostalgia and charming atmosphere but I also love the new style as it brings this certain freshness to it and it doesn't take them as long as everything is computer generated and they can push episodes out faster than they would if they still used the cutouts, both styles have their pros and cons.

South Park has always had this uniqueness that it carries over with each season stylistically, slight improvements or changes giving almost every season a distinct look but still being similar to the ones near it, take the jump from season 18 to 19 as an example, or the contrast between season 4 and 5, it's very slight but they all feel slightly different

I personally love the original style. That gave it more depth and character to its authenticity. It made the facial animations and animals it’s on identity and humor. Most of the time when I quote South Park it’s that time period.
I grew up with South Park since it first aired on Comedy Central back in 1997. It’s my all time favorite show along with Futurama.

I do think in some aspects that the hyper-realistically drawn animals hanging around is inherently a lot goofier than the intentionally crappy ones. The really detailed backgrounds are a bit strange sometimes, but honestly my only real gripe with the style now is the gradients and the fact that the construction paper style is inconsistently portrayed these days - I liked the large drop shadows present in the older episodes and today they’re a lot smaller and more subtle a lot of the time.
I really want to do a video on this specific subject at some point, because I think there’s a lot to talk about here.
