Ingredients:
2 tbsp olive oil
1 tsp cumin seeds
 2 cloves fresh garlic, finely chopped
2 green chilies, deseeded and chopped
1 medium onion, sliced
2 cups potato, diced 1/2" – 3/4“
4 cups spinach, chopped
¼ teaspoon kosher salt
¼ tsp red chili powder
1/8 tsp turmeric
1 tbsp lemon Juice
3 tbsp water
¼ tsp garam masala
1 tsp toasted sesame seeds
Drizzle of tahini, optional


Directions
1. Heat 2 tablespoons oil in a pan.
2. When the oil turns hot add ¾ teaspoon cumin and let them toast.
3. Then add 2 cloves of garlic and 1 to 2 green chilies. Cook for one minute.
4. Next add sliced onion and let cook until light golden.
5. Add potatoes to pan and saute for 3-4 minutes. Stir fry until the potatoes are fork-tender. Pour 3 tablespoons water and cook covered until tender but not mushy.
6. Then add turmeric, salt, chili powder, & garam masala (optional). Saute for 1-2 minutes. Taste test and add more salt or spice as desired.
7. Next add 4 cups of chopped spinach. Saute on a medium-high flame for about 3 minutes or until the leaves wilt. When the moisture evaporates turn off the stove.
8. Sprinkle 1 tsp of toasted sesame seeds and lemon juice before serving. (Optional: Add a drizzle of tahini for creaminess.)
9. Serve as a side dish or in a wrap.
