200g all-purpose flour
2 tsp baking powder
1/4 tsp salt
200g granulated sugar
150g unsalted butter (room temp.)
1 1/2 tbsp lemon zest
3 eggs
250g ricotta cheese
1 tbsp lemon juice
Instructions:
Preheat your oven to 350°F (180°C) and grease and flour a 9-inch round cake pan
In a medium bowl, whisk together the flour, baking powder, and salt - set aside
In a large mixing bowl, cream together the butter, sugar, and lemon zest
Add the eggs
Gradually, add the dry ingredients to the wet ingredients
Fold in the ricotta cheese until evenly incorporated into the batter
Finally, stir in the lemon juice until combined - be careful not to overmix
Pour the batter into the prepared cake pan
Bake in the preheated oven for 45-50 minutes,
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely
Once cooled, dust the cake with powdered sugar
