Switch the lime with calamansi or coconut vinegar or white cane vinegar and add soysauce and that would be the common all around/all purpose sauce filipinos use for everything from tortang talong to eggs to fried fish and even fried chicken or bbq and yes even in porridge...

My entire life, I have not once seen a cooked eggplant that looks appetizing. I still have not.

I’m sure it must taste good, but that slimy, mushy look and texture is a no for me.
