Kebab Chutney with air fried kebabs in my Instant Vortex 🔥
Ingredients:
For kebabs (makes 30 medium sized)
1kg mince
1 large onion, finely chopped
2 green chillies, finely chopped
20 grams fresh mint
15 grams fresh coriander
1 teaspoon turmeric powder
1 teaspoon cumin (jeera) powder
1 teaspoon coriander (dhania) powder
1 teaspoon chilli flakes
1 tablespoon chilli powder
salt to taste
1 tablespoon ginger & garlic paste
1 egg
Method:
Add all the ingredients to a large bowl & mix thoroughly with hands until everything is well incorporated.
Pinch off pieces of the mixture, press in between palms & then roll into balls.
Place the balls onto the air fryer tray & air fry for 30 minutes at 180° Celsius, making sure to turn them halfway through.
I’m using my instant vortex air fryer so the times may differ on other air fryers so check accordingly.
Alternatively, these kebabs can be fried in shallow oil or grilled in the oven.
Once cooked, remove & set aside.
For chutney:
3-4 tablespoons vegetable oil
1 medium onion, chopped
3 green chillies, slit
1 tablespoon chilli powder
10 jam/roma tomatoes
salt to taste
1 teaspoon sugar
fresh coriander for garnishing
Method:
Add vegetable oil to a pot on medium-high heat.
Add in onions & green chillies. Mix & sauté until onions are translucent.
Add chilli powder & stir.
Blend the tomatoes & add it into the pot, mix well, cover & allow to cook on medium heat for ±20 minutes or until the oil surfaces & the tomato chutney has thickened.
Add sugar & salt to taste. Mix well.
Add in the kebabs & coat well in the chutney.
Cover & simmer for 5-10 minutes to infuse flavours.
Garnish with freshly chopped coriander & serve.
