Paneer Tikka

These gorgeousss Paneer Tikka skewers will make the perfect starter, or even a main alongside some Mint Chutney and some naan. It’s so easy to make and they’re actually quite the showstopper! They’re perfectly smoky and infused with spicy and tangy flavours.
Ingredients:

7 skewers (soak in water for an hour)
500g Paneer
2 red bell peppers (large pieces)
2 red onions (large pieces)
1/2 Tsp pepper
1/2 Tsp salt
1 Tsp dried Fenugreek leaves
1 Tsp garam masala
1 Tsp coriander powder
1/2 Tsp cumin
1/2 Tsp paprika
1 Tsp tandoori powder
1 Tbsp Kashmiri chilli powder
1 Tsp chilli powder
2 Tsp yoghurt
3/4 Tsp garlic paste
3/4 Tsp ginger paste
1/4 lime juice
1 Tbsp tomato purée
1 tbsp olive oil
Small handful of fresh mint
Small handful of fresh coriander
Light fry spray
1. Pour hot water over your paneer and soak for 5 mins (for better texture and colour)
2. Add all your seasonings, sauces, oil and fresh herbs.
3. Marinade for as long as you can or want. I did for just 30mins.
4. Skewer the paneer with the red peppers and red onions
5. Bake at 200° for 12 mins
6. Carefully hold each skewer over the cooker flame to get a nice char. You can also use a blow torch or a grill.
