Halloween Red Cabbage Rolls πŸŽƒ

Ingredients for around 8 cabbage rolls:

8 red cabbage leaves
200g any mushroom
3 spring onions
1 carrot
200g tofu
1 cup of cooked rice
1 tbsp soy sauce

Tomato sauce:
4 garlic clove
1 tsp fennel
1,5 tsp cumin
1 tsp coriander
4 tbsp tomato paste

Instructions:

1. Steam or microwave the cabbage leaves until they are soft and flexible.

2. Slice the mushrooms into small pieces. Cook them on high heat with a sprinkle of salt, without oil, until they release their juices and begin to brown. Then, add 1 tablespoon of oil and continue to cook until they are slightly browned.

3. Add the chopped spring onion, finely chopped or grated carrot, and crumbled tofu to the pan. Fry for about 5-10 minutes, then stir in soy sauce and cooked rice. Set the filling aside.

4. To make the sauce, heat 1 tablespoon of oil in a pan over medium heat. Crush the garlic and sautΓ© it along with the rest of the ingredients. Cook until the tomato paste darkens and the mixture becomes fragrant, about 5 minutes. Add enough water to cover one-third of the pan, and season with salt and pepper to taste.
5. Remove the thick stem from the cabbage leaves. Place a portion of the filling on each leaf and roll them up tightly.

6. Place the cabbage rolls in the sauce and bake in the oven for about 30 minutes
