Most of the time the electrical surge is mitigated.
Besides being loud and get the pilot to piss himself, not much SHOULD happen.
But what COULD happen varies from electronic system failure all the way to fire of fuel vapor

Had a KC135 get struck on the AR Floodlight tail section. It was gone when it came in. All burnt along with the HF wire was black. Inspected all the electrical and it flew out over 14 hours to the states.

I got shocked by my throttles a bit while flying the T-38 through weather. I told the controller I was going to an immediate 180 if he didn’t get me out quickly. The Talon has no radar and doesn’t do weather well.

A lot of maintenance can come from jets getting hit by lightning so rip those thunderbird maintainers having to work on those F-16's when they landed.

Generally speaking, nothing happens when the jet gets hit. Its designed to not really hurt anything at all. The only thing you have to change is the pilots diaper when they land.
