Looking for a healthy and delicious meal? Try this vibrant quinoa salad! Packed with fresh veggies and zesty lemon dressing, it’s perfect for lunch, dinner or meal prep. Quick to make and bursting with flavour, this salad is a nutritious way to enjoy your favourite ingredients.
🌱Recipe:
150 gr quinoa, for a better flavour I use to roast the quinoa, then add water and boil it then wash it properly and leave it for a few minutes in a strainer.
Meanwhile, shred the red cabbage, 50 grams each vegetable, then shred one carrot, half cucumber, spring onion, cut two tomatoes in small pieces, shred one bell red pepper, add quinoa, add 50 gr of edamame as well. Can be added some parsley as well.
For the dressing you need: 2 tsp grated garlic, 1 tsp grated ginger, 1 lemon juice, 3 tbsp olive oil, 2 tsp vegan mayo, 1 tsp soya sauce, (can be added some italian herbs for better flavour) then mix them well and pour it over the salad. Sesame seeds and crushed cashew nuts can make your salad even crunchy. Enjoy!☺️
