I found a minimalistic little restaurant near Tokyo in Japan that sold bonito fish and bonito flakes that were home made and tasted amazing. They used a weird ancient cooking style of slightly grilling the fish over rice straws which made it taste excellent. If you are ever in Japan definitely try this restaurant, it is called Nikkomaru Shokudo! Especially if you are a friend of sushi and sashimi.

The dish is called Katsuo no Tataki or straw grilled bonito. Only a few shops in Tokyo would have this. Curious where is this shop located?

Bro go to Kōchi. It's even better there as they don't use soy sauce, but flaky salt. Obviously the freshness is also great
