🌿Ingredients 🌿
Oil - 1 Tsp
Potatoes - 3 Medium
Carrot - 1 Large
Green Peas - 100 g
Tomatoes - 2 Medium
Beetroot - 1 Medium
Salt - 1 Tsp
Water
Second pan
Oil - 1 tsp
Butter - 2 Tbsp
Cumin Seeds - 1 Tsp
Onion - 1 medium
Ginger - 1 Inch
Garlic - 8 Cloves medium
Green Chili - 2 medium
Turmeric Powder - Half tsp
Red Chili Powder - 2 tsp
Cumin Powder - 1 & Half tsp
Garam Masala Powder - half tsp
Bell Pepper - 1 Medium
Salt - 1 & half tsp
🌿Steps🌿
👉🏾Heat a pan & add oil, then add the vegetables
👉🏾Add water so the vegetables are submerged & then add salt. Cover & cook till the vegetables are soft.
👉🏾Heat another pan, add oil followed by vegan butter.
👉🏾Add cumin seeds & finely chopped onion, cook till they are translucent
👉🏾Add grated ginger & garlic, green chilis. Cook for 2 mins over low heat
👉🏾Add the spices, turmeric, red chili, cumin & garam masala powder, cook for another 2-3 mins
👉🏾Add the finely chopped bell peppers & stir fry for 2-3 mins
👉🏾Add the cooked vegetables & mix well
👉🏾Mash the vegetables till they are broken down completely. Add some water if required as the bhaji or the curry is not too thick
👉🏾Finally add lime juice, fresh coriander & kasuri methi(optional).
