In his dishes, he uses local ingredients that are indigenous to North America, while eschewing colonial ingredients, such as beef, wheat flour and dairy. His creations are truly exquisite. He continues to help re-educate the American palate.

Arguably, using colonial ingredients in no way stops a dish from being authentic. Asian cuisine heavily utilizes tomatoes and chilies, which both originated in the Americas - and potatoes as well.

Cool idea. But surely bergamot isn't north American? It's Asian isn't it?

I feel like you might be limiting yourself unnecessarily. If you want to make historically accurate dishes then that would be awsome. But just making modern food but with less options for ingredients seems like a bad idea.
