Minted Lamb, Feta & Spinach Braid

This lamb, feta and spinach pastry is the ideal dish , It’s something different and the flavour combination works wonderfully!
Ingredients:
Rolled puff pastry sheet
250g wilted spinach
350g feta/white cheese
300g lamb mince
2 chopped onions
6 cloves chopped garlic
1 heaped Tsp mixed herbs
1 Tsp harissa powder
1.5 Tsp garam masala
1 Tsp cumin
3/4tsp cinnamon
1 Tbsp paprika
2 Tsp chilli flakes
1 Tsp salt
1 Tsp all purpose seasoning
1 Tsp sesame seeds
1 Tsp black seeds
Handful of fresh chopped mint
1 egg (whisked into egg wash)
Method:
1. Combine all your seasonings and set aside
2. Sauté most of your onions and garlic (leave some aside for your spinach
3. Add your mince and about 60% of your seasoning mix.
4. Brown for 6-7 mins. Ensure there is no liquid.
5. Add the mint and cook for another 2 mins and set aside.
6. Add your spinach to a pan (I used frozen), alongside the rest of the onion, garlic and seasoning.
7. Cook it for 5-6mins if you are using fresh spinach, and for 10-12 mins if frozen. (Make sure there’s no liquid)
8. Break up your feta and create a paste.
9. Lay out your puff pastry and cut off the top 2 corners.
10. Cut the two sides into an equal number of strips, leaving the middle empty
11. Layer your feta, spinach and lamb across the middle.
12. Fold down the top of the pastry and fold up the bottom of the pastry (about 2cm each way) to create a seal.
13. Braid the pastry strips over, alternating between both sides.
14. Apple egg wash, sprinkle with sesame and black seeds.
15. Bake at 200° for 20 mins and enjoy!
