Dipping Sauce:
2 tbsp soy sauce
2 & 1/4 tbsp mirin
1 tbsp sake
3/4 tsp dashi powder
1/2 cup & 2 tbsp (150ml) iced water
100g dry soba noodles
Garnish (optional):
shredded seaweed
chopped green onions
wasabi
1. Add soy sauce, mirin, sake and dashi powder to a pot and bring to a gentle boil. Let it cool.
2. Dilute with iced water to taste. It should be slightly saltier to taste as dipping noodles will eventually dilute the sauce.
3. Add garnish or not, based on your preference.
4. Enjoy!
