Ingredients:
1 1/2 pounds boneless, skinless chicken with bone,breast or thighs, cut into 1 1/2-inch pieces
1/2 cup plain yogurt
2 tablespoons ghee or vegetable oil
2 teaspoons garam masala powder
1 teaspoon ground cumin
1/2 tbs ground coriander
1/4 teaspoon ground cayenne pepper (optional)
Salt, to taste
Chopped cilantro, for garnish
Instructions:
1. In a large bowl, whisk together yogurt, lemon juice, ghee or oil, garam masala, cumin, coriander, cinnamon, cardamom, cayenne pepper (if using), and salt.
2. Add the chicken pieces to the marinade and mix well. Cover and refrigerate for at least 30 minutes or up to 2 hours.
3. Preheat a grill or grill pan to medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off.
4. Grill the chicken until cooked through, about 6-8 minutes per side.
5. Garnish with cilantro and serve hot with basmati rice or naan bread.
