OMG this is the best carrot salad ever!! I made it today and did not expect it to be this delicious! The fresh cilantro totally enhances the flavor. I leave out the cumin just because I've never liked cumin.

Though I'm allergic to the lemon and the mustard I'm determined to make this as I'm obsessed with carrots grated raw. I substitute orange for the lemon. I adore cumin and instead of the Dijon mustard I'll put in some apple cider vinegar I'll let you know what it taste likeπ

Look great - simple, refreshing and delicious! I make a grated carrot, beet and herb (parsley, cilantro or dill) salad, with a dressing made from walnut oil, orange or lemon juice and salt, with chopped walnuts mixed in.
